I am planning on getting some work done to my 700 cdl. I wanted to get it glass bedded, but I've read the the pillars are more stable. The gun is going to be a field gun. I floated the barrel already and want to the rest of the way.

Pillar bedding by far! And don't forget to torque the action screws.

have a 1970's M70 that was glass-bedded as has not deteriorated.

Now a another M70 that will bed and am considering using pillars for that with the full action bedding.

Did a Anschtuz 1413 with aluminum pillars back in the 90's and shoots like a charm, need to do a
Marlin M2000 for improving group size.

Glass bedding and pillar bedding are two different things. Pillars prevent the stock material from compressing under the torque of the action screws and are not really necessary in some stocks. Pillars, by themselves, are not meant to replace regular glass bedding. Most shooters that use pillars will also glass bed the action, including a light skim of glass over the pillars. The combination, if done correctly, should result in stress free bedding that will not change.
